Healthy Dinner - Mushroom Risotto

For 3-4 people

Ingredients


     400 g mixed mushrooms fresh
     juice of half a lemon
     75 g butter
     meat or vegetable broth (with a bouillon cube, it works perfectly)
     2 tablespoons olive oil
     1 small onion, finely chopped
     275 g risotto rice, arborio type Carnaroli or Vialone
     salt and pepper
     Freshly grated parmesan

Instructions


Slice them fresh mushrooms. Sprinkle with lemon. Melt butter and third made ​​fry the mushrooms. When they start to brown, set aside.

Heat the broth.

Heat the remaining butter and olive oil in the pan that contained the fungi.

Roast the onion. Add the rice and stir to coat with fat. Add the mushrooms, stir and add a ladle of hot stock, stir.

Repeat and add the broth slowly, ladle by ladle. After about twenty minutes, add salt and pepper. If the rice is not quite tender, continue cooking.
Remove from heat.

Add a few knobs of butter and parmesan cheese. (For the grate, I use a peeler).

Let stand 3-4 minutes before serving.
