Lasagna with Roasted Vegetables

Ingredients
   3 piece (s) Eggplant
   3 piece (s) Peppers
   4 piece (s) Tomato
   4 clove (s) Garlic
   2 tbsp rapeseed oil (olive)
   1 pinch (s) salt
   1/2 pinch (s) Pepper
   180 g Pasta flood (9 lasagna sheets)
   20g Parmesan
   Mozzarella 90 g lighter


Instructions

     Preheat oven to 220 ° C.

     In a saucepan, stir fry the vegetables with olive oil and garlic for 20 minutes or until vegetables are tender, and stir occasionally.

     Put half the vegetables in the blender and add 25 ounces of water (740 ml). Mix until you have a puree. In a dish, put half of the vegetable puree to the bottom, and then add 3 lasagna sheets on top.

    Repeat by adding 3 sheets of pasta, mashed vegetables with half the remaining vegetables, 2 tablespoons Parmesan and mozzarella 30 g, achieve a final layer with 3 sheets of lasagna, mashed potatoes and remaining vegetables, finally add the remaining cheese.
