Pasta with Lemon and Basil

Pasta with Lemon and Basil

Ingredients

     10 oz (300 g) linguine or other long pasta
     ½
lemon
     3 tab (45 ml) olive oil
     1 cup
of fresh basil leaves
     ½
tsp salt
    
¼ tsp freshly ground black pepper
     1 can white beans, drained and rinsed (19 oz / 540 ml)
     small basil leaves (optional)

Preparation

. In a large pot of boiling water add the salt, cook pasta 8 to 10 minutes or until al dente. Drain pasta reserving 1/2 cup (125 ml) of the cooking water and return to pot. Cover and keep it warm.

. Meanwhile, finely grate zest ½ lemon (you should get 2 tsp. / 10 ml). Squeeze half a lemon and reserve the juice. In a small skillet, heat 1 tbsp to tab (15 ml) of the oil over medium heat. Add lemon zest, cook and keep stirring for about 1 minute or until lightly browned.

. In a food processor or blender, puree until smooth lemon zest with lemon juice reserved, the remaining oil, basil, salt and pepper. Add cooking water reserved pasta, 1 tsp. to tab (15 ml) at a time, by pressing the camera after each addition, until sauce is desired consistency.

. Add sauce and white pasta to pot and toss gently to coat beans. You can do the garnish with some basil leaves.
