A quick recipe, tasty and easy to make, perfect for camping! In summer, it is quite easy to vary the vegetables: green onions, carrots, zucchini, eggplant, peas, mushrooms, peppers, etc. We choose those that will stand the best few days without fridge!
ingredients
1 lb (500 g) short pasta
2 cups (500 ml) of fresh vegetables mix
1 c. to tab (15 mL) oil
3 cups (750 ml) tomato sauce
1 can white beans, drained and rinsed (19 oz / 540 ml)
1 cup (250 mL) cooking cream 15%
preparation
1 Cook the pasta according to package directions. Drain and set aside. In the same pan, heat oil over medium-high heat. Cook the vegetables for about 5 minutes (depending on the chosen vegetables) or until aldente (cooked, but still crunchy). Add tomato sauce, beans and cream. Bring to boil. Stir in reserved pasta, mix well and serve immediately.
