Chicken in Honey and Ginger Sauce

INGREDIENTS
4 tablespoons honey
4 inches of fresh ginger, peeled and thinly sliced
1 teaspoon salt
1 teaspoon of pepper
4 chicken breasts
Juice of 1 lemon
2 tablespoons coconut oil
Cilantro or parsley for garnish
Chambray lining baked chips (optional)
Chicken in Honey and Ginger Sauce
PROCEDURE
In a medium bowl, combine two tablespoons of honey (leaving aside the other two tablespoons), ginger, salt and pepper. Place raw chicken breasts in the mixture and lightly stir, making sure the chicken is covered evenly. Set aside. Put the remaining honey, lemon juice, salt and pepper potato chips baked or cooked previously chambray but firm, in a large bowl and stir to combine ingredients. In a medium saucepan heat the coconut oil over medium-high heat and cook the chicken breasts. Once cooked, serve the chicken together with chambray seasoned fries and garnish with a sprig of cilantro or parsley.
