Easy Dinner - Green Chicken Enchiladas

Learn how to prepare these delicious green chicken enchiladas with a creamy, rich sauce. You'll love this version of enchiladas, because it is not the typical recipe for green enchiladas.

To make the enchiladas, melt the butter in a pan. Add chopped jalapenos and stir fry for 5 minutes. Add garlic and flour and cook for 3 minutes. Add chicken broth and mix well.

When it has boiled, lower the heat and add salsa, sour cream, cumin, coriander, salt and pepper. Mix until everything is well mixed and remove from heat.

Grease a container that can fit in the oven and cover with a little sauce. If the tortillas are not fresh, get them a few seconds in the microwave to roll them.

In a bowl, add shredded chicken, chopped onion, Monterey Jack cheese mix, and ½ cup of mozzarella cheese. Tortillas are filled with chicken mixture and placed in the container (placing the portion where the omelets are attached downward). Cover with sauce and remaining half cup of mozzarella cheese is added.

Bake 20 to 30 minutes or until cheese is melted or grated. They can be served with more sauce with sour cream and cilantro.

     2 chicken breasts, cooked and crumbled
     1 cup mozzarella cheese, grated
     ½ cup shredded Monterey Jack cheese
     ¼ onion, finely chopped
     1 clove garlic, finely chopped
     1 tablespoon flour
     2 tablespoons butter
     1 cup chicken broth
     1 cup sour cream
     1 can of green sauce, girl
     2 jalapeno peppers, finely chopped
     3 tablespoons cilantro, finely chopped
     8-10 corn tortillas
     1 teaspoon of cumin
     ½ teaspoon salt
     Pepper to taste
