Creamy Orzo with Asparagus and Green Peas
Orzo pasta looks like risotto, the cooking technique is similar, but this recipe is made from orzo, pasta as a grain of rice. Orzo slowly cooked in chicken broth, milk, and cream until cooked al dente. Al dente means that the dough or rice is tender on the outside and firm inside. It's creamy, sweet and a nice way to use orzo.

Creamy Orzo with Asparagus and Green Peas
Ingredients1 tablespoon olive oil
2 tablespoons of butter
2 small shallots, finely chopped
2 cloves garlic, minced
1 ½ cups of orzo
1/4 cup dry white wine
2 cups chicken broth
2 cups of milk
1/3 cup 35% cream
3/4 cup frozen peas
75 g grated parmesan
Salt and pepper to taste.
18 asparagus, cut into 1-inch pieces (the fibrous ends removed)
Fresh basil leaf and grated parmesan (optional).
Instructions
1. In a nonstick skillet, melt butter with olive oil. Stir fry the shallots and garlic, without browning. Add white wine and cook until evaporated.
2. Reduce heat to medium, add the orzo and stir well to coat. Add chicken broth and 1 cup of milk and cook, stirring often, until the liquid has evaporated.
3. Add gradually remaining milk and add more if needed, until al dente.
4. Add the asparagus and cream. Cook for 2 minutes or until asparagus is almost done. The orzo will absorb the excess liquid based.
5. Stir in peas and Parmesan and mix well for about 1 minute. Remove from heat and let stand for 3 minutes. add salt and pepper. Serve immediately sprinkled with fresh basil and grated Parmesan.
