Pasta with Tuna and Broccoli Casserole
Ingredients (4 people)2 3/4 cups (675 ml) milk
1 3/4 cups (425 ml) water
1/4 teaspoon salt
10 oz (300 g) rotini or fusilli pasta
6 cups (1.5 L) broccoli florets, chopped (1 large head of broccoli)
8 oz (250 g) ricotta cheese
1 teaspoon (5 ml) grated lemon rind
3 tablespoons (45 ml) freshly squeezed lemon juice
1/4 teaspoon pepper
2 cans (340 g) of flaked tuna can, drain
preparation
In a large saucepan, heat 2 ½ cups (625 ml) of milk with water and salt over medium heat until steaming. Add pasta. Cover, reduce heat to medium-low and simmer 10 minutes, stirring once. Add broccoli over pasta, cover and simmer 5 minutes or until pasta is tender and broccoli is tender but crisp.
Stir in the ricotta, lemon zest, lemon juice and pepper to prepare and stir to combine. Stir in remaining milk to moisten the pasta if necessary and in desired consistency. Stir in tuna, stir gently.
advice
For extra flavor, you can increase the grated lemon zest 1 tablespoon (15 ml), add fresh herbs, about 1/4 cup (60 ml) chopped fresh basil or 2 tsp (10 ml) chopped fresh thyme (add together the lemon zest).
