Easy Dinner Recipes - Chicken and Cashews

Chicken and Cashews

Here is one of my favorite Thai dishes, chicken with cashew nuts. A soft chicken, perfectly spiced, with onions, red peppers, green peppers large and especially its crunchy cashews. A real treat especially with sticky rice! There are many variations on this dish. I give you my favorite, with a tangy and sweet savory sauce.

Recipe chicken with cashew nuts, for 4 people:

-8 Thighs boneless chicken
-2 Red peppers
-1 onion
-2 Large green peppers
-6 To 8 small red chillies birds
-150 To 200g cashew nuts, not roasted, unsalted
-2 Dried chili peppers
-2 Cloves minced garlic
-1 Dozen chives
-1 Tablespoon soy sauce
-1 Tablespoon fish sauce
-2 Tablespoons of oyster sauce
-1 Tablespoon sugar
-1 Tablespoon garlic sauce and chili
-1 Half tablespoon double concentrate tomato
-2 To 3 tablespoons water
-oil (not olive!)


First remove the skin from chicken thighs. It's simple, just pull over! Remove small pieces of fat lurking here and there. Then remove the central bone with a knife. Also ensure that there is more cartilage!

Then Cut the chicken into pieces.

Cut the red pepper into large pieces, taking care to remove the seeds.

Also cut the onion into large pieces.

Here is the green chili. You can see it's big, and a chili's big, it's less strong. It hardly stings ... So just slice it and save the seeds.

Take latex gloves to protect your hands by cutting the bird peppers ... Just remove the tail, cut in half lengthwise and remove seeds.

Prepare the sauce. Here is the sauce with garlic and chilli, it can be found in all Asian grocery stores. It can be replaced by the red pepper paste, more concentrated. It will then put half.

Put the chilli sauce and garlic, oyster sauce, sugar, fish sauce, soy sauce and tomato paste twice in a bowl with water and mix well.

Apply oil (1 centimeter good) in a wok or large skillet. When the oil is hot, fry the raw cashews.

Mix well to brown on all sides.

Then remove to a bowl by filtering the oil.

Replace 4 tablespoons oil in wok over high heat. Add the dried chilies. There is much in the picture, but we can not put two.

Then chopped garlic.

When the garlic begins to smell and lightly browned, add the chicken thighs into pieces.
For those who do not like the food too spicy, you can remove the dried pepper at this time!

Mix well (still on high heat).

Add the onions.

Cook 1 minute, stirring, then add the red peppers and chilies birds.

A minute later, add the green chillies.

Cook for 2 minutes, then add the sauce.

Cut chives into slices.

Then add to the wok.

Immediately add the fried cashews.

Mix well and cook for one minute and serve immediately.
