A very green and delicious asparagus soup, with simple ingredients. This soup is healthy and easy to make.

Ingredients (4 people):

     - 500 g asparagus
     - 20 g butter
     - 1 tablespoon flour
     - 750 ml of boiling water
     - 2 tablespoons sour cream
     - 1 egg yolk
     - Salt, pepper, and nutmeg

Preparation of the recipe:

Peel the asparagus and expand them into lengths of 4 or 5 centimeters. Keep the tips separately.

Melt the butter in a pan, sprinkle with flour and pour boiling water. Throw in the asparagus and season with salt and pepper.

Cook at a simmer for 30 minutes, mix and strain through a fine sieve to remove the fibers.

Reheat over low heat with the points for 10 minutes. Off the heat, then add the beaten egg yolk with the cream.
Adjust seasoning and sprinkle with freshly grated nutmeg nuts.

Serve on warm plates.
